Make The Kids Something Special on Labor Day

Already planning your best barbecue for this Labor Day weekend? Awesome! Have you given careful consideration what you’ll be serving the children of your extravaganza? Kids can be picky. It’s just their nature. Preparing simply delicious and flavor-packed meals for them is the secret to keeping them happy, entertained, and fuss-free! What’s more, kids love getting their hands in the game-- that is to say, if you plan it correctly, your Labor Day barbecue could be the perfect opportunity to spend some quality time with your little ones.

Give them the prep work you know they can handle, and share your love for cooking! There’s nothing more enjoyable than sharing your family’s tried and true recipes. And if you like ours, we may become a staple of your household! If there are no aspects of these recipes you feel comfortable tasking to your children, why not invite them to observe you in the kitchen or on the grill? They may ask a lot of questions, but in ten years when they’re grilling you a Labor Day feast, you’ll be happy you put the time in.

1. Savory Mushroom and Sausage Mini-Toasts

Ingredients List:

½ Pound Fresh Italian Sausage

¼ Cup Fresh Onion

1 ½ Tablespoons of Olive Oil.

7 Tablespoons of Butter

¾ Pound Fresh Mushrooms

½ Teaspoons of Crushed or Chopped Garlic

3 Tablespoons of Freshly Squeezed Lemon Juice

2 Tablespoons of Freshly Squeezed Orange Juice

Salt & Freshly Ground Black Pepper

¼ Cup Italian Parsley

14 Slices of Baguette-Style Bread

Preparation Directions:

Step One: Remove sausage from casings.

Step Two: Chop onion.

Step Three: Thinly slice mushrooms.

Step Four: Either crush or chop garlic.

Step Five: Chop Italian parsley.

Step Six: Cut bread into 1” thick slices.

Mushroom Toast Directions:

Step One: In a medium sized frying pan stir up your sausage, onion, and garlic in the olive oil while adding one tablespoon of butter over medium to high heat. Let this cook together for about ten to twelve minutes. Remember to stir occasionally to evenly distribute the heat. Take care to crumble your sausage while stirring.

Step Two: Fire up another pan, adding three tablespoons of butter, saute your mushrooms for six to eight minutes.

Step Three: After sauteing your mushrooms to perfection, stir them in with your sausage and onions. Throw in the lemon and orange juice along with salt and pepper to taste. Don’t rinse out your pan just yet, we’ll be using it again!

Step Four: Reduce the heat and simmer for about five wholesome minutes.

Step Five: Stir in your fresh parsley and melt in your remaining butter.

Step Six: Preheat your broiler and place the rack six inches away from the main heat source.

Step Seven: Lightly dip the bread into the butter-- but remember only dip one side.

Step Eight: Place all bread slices inside the broiler, buttered side up. Broil until the tops of the bread begin to toast nicely.

Step Nine: Remove the bread from the broiler and ladle the hot sausage and mushroom mixture onto the miniature toasts. This recipe is great for dishing out to tiny, hungry hands.

Step Two: Clean and remove the seeds from one fresh green bell pepper. Slice the pepper thinly.

Step Three: Slice ½ of an onion.

Sausage Sandwich Directions (Mayo, Mustard, and Pepperoncini):

Step One: Barbecue, broil, or pan fry your sausage selection.

Step Two: Slather your choice of roll in mayo and mustard.

Step Three: Add sliced pepperoncini peppers and place sausage. For kids with a spice sensitivity, try substituting banana peppers. Enjoy!

3. Delectable Spinach and Sausage Pies

A sure-fire way to get the kiddies to eat their vegetables! These homemade spinach and sausage pies will become an easy favorite and will forever be remembered (and requested)!

Ingredients List:

¾ Pound Fresh Spinach

¼ Cup of Salt

3 Tablespoons of Olive Oil

¾ Pound of Fresh Italian Sausage

3 Fresh Basil Leaves

¾ Cup of Parmesan or Romano Cheese

¼ Teaspoon of Ground Black Pepper

2 Packages of Ready-to-Use 9” Pie Crust

2 Fresh Egg Yolks

1 Teaspoon of Milk

Preparation Directions:

Step One: Remove sausages from casings.

Step Two: Grate parmesan or romano cheese.

Spinach Pie Directions:

Step One: Wash spinach and tear leaves into pieces. Place in a colander.

Step Two: Sprinkle torn pieces with salt, tossing well. Leave to sit unrefrigerated for one hour.

Step Three: Wring out your spinach. Get your hands in there and squeeze the leaves like a towel! (This is a great kid-friendly task.)

Step Four: Spread out your spinach to dry on paper towels.

Step Five: Add olive oil to the bowl and crumble in the sausage.

Step Six: Add the spinach leaves, basil, cheese, black pepper, and mix.

Step Seven: Cut the pie crusts into fourths and fill each piece. Fold over and crimp the edges with a fork to keep your filling from spilling out.

Step Eight: Poke small holes or slit the top of each pie, allowing heat to filter through.

Step Nine: Beat the egg yolks and milk to make a brushing for each pie top. Brush tops.

Step Ten: Preheat oven to 350°F. Bake for thirty to thirty-five minutes and enjoy!
