3 Veggie-Packed Sides to Serve with Sausage

A man cannot live on sausage alone!
Well, we could, but our tastes are a little specific.

Sausage – whether spicy grilled links or crumbled in a creamy pasta – deserves a veggie-packed side dish to round it out. Vegetables are the perfect counterpoint to Papa Cantella’s fresh sausage: They’re flavorful, they’re moist, and they’re always in season in one form or another.

So, which veggies are we serving with our sausage these days? Here are three vegetable sides we can’t get enough of.


  1. Papa Cantella’s Cauliflower Mash

    We can’t stop singing the praises of our low-carb Cauliflower Mash, and neither can anyone else who’s had it. The perfect weeknight side, Cauliflower Mash goes as beautifully with simply seared sausage links as it does with a composed sausage dish like our Sicilian Meat Roll. If your family’s trying to eat more veggies without always falling back on potatoes, our favorite cauliflower side is one you need in your repertoire. You can find it in the pre-made foods section of your local grocery store or Costco…buy two so you can keep one in the freezer!

  2. Mardis Gras Dinner Salad

    We love this salad because it’s incredibly versatile. If we don’t have baby mixed greens? We use kale! Out of feta? Switch in goat cheese! Mardis Gras Salad is essentially two salads combined: a simple green salad with the added crunch of hearts of palm (sold both canned and frozen) plus a generous helping of our world famous New Orleans Olive Salad, which is more fruit than veggies but they still count, right? There’s really nothing better than briny olives and crunchy greens alongside a few of our deliciously flavored sausage links.

  3. Vegetable Kabobs

    When we’re really craving veggies, the simplest (and easiest) way to cook them up with some award-winning Papa C’s sausage is to do ‘em on the grill. And the best way to do that? Kabobs, of course! Our favorite veggies to skewer include peppers, onions, zucchini, and eggplant, but you can use almost anything you have on hand. Just be sure to cut all the chunks roughly the same size so they cook at the same rate and to generously oil and season with salt and pepper before placing on the grill. And don’t forget to soak your wooden skewers in water before grilling to avoid a flare up!
