What is Andouille Sausage?
Andouille has long been a mainstay of the Cajun cuisine tradition, itself a mashup of French and Creole cooking. (Creole, in turn, represents a staggering array of cuisine styles ranging from German to West African to Spanish, and more.)
Andouille sausage today is typically made from pork, specifically pork butt. But it doesn’t have to be! At Papa Cantella’s, we put a unique twist on one of our andouille lines by making it with chicken, although we also sell lots of pork andouille, too. Traditional andouille is smoked, making it intentionally a bit drier than other sausages, and infused with strong flavors like garlic, pepper, paprika, file, cumin, and more.
How Can Andouille be Customized?
Great question! All sausage, actually, is just a canvas for your imagination. Andouille is a very forgiving sausage, and because its flavors are already so bold, you don’t have to worry about putting “too much” of anything in. Andouille is usually sold in pre-smoked “links,” but it doesn’t have to be if that’s not what your application demands.
A lot of restauranteurs come to us looking for extra-spicy andouille because their clientele has strong heat tolerances. Others ask for large, fresh andouille links to use in a recipe that calls for poaching, not smoked sausage slices. Sometimes health-conscious chefs come to us looking to lighten up a menu mainstay, which is how our Smoked Chicken Andouille sausage was born.
