Sausage is but a tool in every talented home cook’s arsenal.

In fact, sausage is a tool in any home cook’s arsenal! Its versatility makes it the perfect ingredient! Here at Papa Cantella’s, we love how bold sausage’s flavors are; to us, any dish to which sausage is added is immediately improved.

So, which classic sausage dishes should every home cook have in their back pocket? Here are just a few of our favorites.

 

Sausage & Egg Casserole

Who doesn’t need a fantastic brunch recipe on standby? Our Sausage & Egg Casserole is perfectly light and chock full of healthful veggies. You can make it using whatever you’ve got in your fridge, but we’re partial to tomatoes, zucchini, and mushrooms in ours. The best part? Sausage & Egg Casserole saves wonderfully; you can make one on Sunday and heat up slices all week!

 

Tuscan Foya Bread & Sausage Salad

“Foya” was originally an Italian peasant dish, great for using up leftovers and fresh seasonal produce. Today, it’s a dish worthy of any table! What’s fantastic about our Bread and Sausage Foya is that it’s light enough to serve as a side or hearty enough to eat as a meal. Be sure to include fresh basil leaves – they’re key!

 

Sunday Sauce

Whatever you want to call it, tomato sauce is better with sausage. Our family’s version comes from Mama Cantella and is known as Caryn’s Special Sunday Sauce. This cooks for several hours, so it is the perfect item to get on the stove early on a Sunday afternoon, and you will enjoy that delicious aroma throughout the house all the way up to dinner time! The rich, intensified flavor of this sauce works beautifully over any kind of pasta, in baked pasta dishes or even for a sauce sandwich in a crusty roll with some melty mozzarella.  Save the leftovers and make tasty creations all week long!

 

Stuffed Eggplant

This isn’t a classic in your house yet? It will be soon! We love Stuffed Eggplant because they’re endlessly versatile. Our family’s recipe includes both Italian sausage and ground beef as well as a plethora of Italian herbs. When it’s 4:30 p.m. and we don’t know what we’re doing for dinner yet, we inevitably crack open a couple of eggplants and create a hearty, filling meal.

 

Pasta E Fagioli with Sausage

Great soup is the measure of an excellent home cook; the best soups are rich in flavor and endlessly complex. Pasta e Fagioli is a true Italian classic. It includes everything from crumbled Italian sausage to fresh herbs and veggies to pasta shells, and our favorite recipe makes a huge batch! Be sure to have some crusty bread and grated parmesan cheese handy for serving.
