Healthy Sausage Recipes for This Holiday Season

The holidays are right around the corner! Americans are preparing their menus all across the country and many of those dishes are packed with carbs that can leave guests feeling a bit sluggish at the end of the meal. There are small changes that you can make to lighten up your festive dishes without sacrificing flavor, one being serving an appetizer that is lower in carbs to tease the pallets of your guests before the main meal. We absolutely love this one bite appetizer that is low in carbs but big in flavors that will have your guests begging for the recipe at the end of the meal.


Low Carb Italian Sausage Stuffed Mushrooms

One of our favorite side dishes is stuffing. Ham, Turkey, mashed potatoes and gravy are all great but there is something special about a yummy appetizer to kick off the holiday? We love this recipe that is on the lighter side and uses our all natural mild Italian sausage.

Cook: 40 minutes
Total: 50 minutes


Ingredients

1/2 LB Cantella's Premium Mild Italian Sausage

1/2 LB Ground Beef (90/10 meat to fat ratio)

4 oz. reduced fat cream cheese

1 1/2 cup reduced fat cheddar cheese

2 teaspoons Worcestershire sauce

1/2 teaspoon garlic powder

4 pints baby portobello mushrooms

Cooking spray


Directions

  1. Preheat the oven to 400 degrees F

  2. Wash the mushrooms to remove all dirt and pay to dry. Remove the stems. Using a small spoon, carefully scoop out some of the mushroom from the middle.

  3. Grease a cookie sheet with the cooking spray and line the mushrooms with the scooped side facing up.

  4. Bake for 15 minutes.

  5. While the mushrooms are baking, cook the Cantella's Premium Italian Sausage and the ground beef in a large skillet until cooked through and brown on medium heat.

  6. Reduce the heat to low and stir in the cream cheese and 1 cup cheddar cheese until melted and mixed well with the meat.

  7. Add the garlic and Worcestershire sauce and mix well to combine.

  8. After the mushrooms are cooked and cooled to the touch, fill with the meat and cheese mixture.

  9. Top the mushrooms with the remaining cheddar cheese.

  10. Return the mushrooms to the oven for 15 to 20 minutes or until the cheese is melted and just starting to bubble.

This recipe makes about 56 stuffed mushrooms. That may seem like a lot but your guests will go nuts for them and they will be gone before you know it!
