5 Favorite Summer Sides to Serve with Sausage

Is there anything more American than grilled sausage in the summertime?
We think not.

Papa Cantella’s has a long history in premium sausages, and there’s no time we feel more ourselves than summer. Whether you’re grilling (our preferred method!), baking, or stove-cooking, here are our favorite summer sides for sausage.

  1. Pasta Salad
    But we don’t mean just any pasta salad. The good stuff shouldn’t be drowned in dressing (and it shouldn’t contain mayo.) We love a fresh-mix of chopped cucumbers, olives, tomatoes, and noodles, tossed with torn herbs like basil and thyme. Drizzle with an oil-and-vinegar mix while warm, then chill until serving for a pasta salad that’s more like, well, salad.

  2. Peppers & Onions
    Does it get any more classic? Whether you’re serving your sausages sandwich-style or solo, sautéed onions and peppers are always a welcome treat. We love using bell peppers in several colors for a visual punch and the sweetest onions we can find. Take it up a notch by grilling your onions and peppers for a little extra char.

  3. German Potato Salad
    German potato salad is a little less rich than traditional American potato salad which is why it balances sausage nicely. Instead of a mayo-based sauce, use ground mustard; the extra zing perks up the palette. We like ours with potatoes, chives, celery, and maybe a little bacon.

  4. Orange Salad
    In some parts of the country you’ll find versions of Orange Salad known as “ambrosia,” but our take is less dessert and more side dish. Simply combine a few peeled, sliced oranges with lemon juice, anise seed, olive oil, and black pepper, then serve alongside your favorite Papa Cantella’s sausage. The citrus of the oranges provides a nice contrast to the hearty sausage.

  5. Cole Slaw
    There are dozens of variations on coleslaw, from creamy to tangy! It’s an economical dish that holds up well when made beforehand – just be careful not to overdress. We like our slaw with purple cabbage and an apple cider vinegar base, but feel free to make yours your own. You really can’t make slaw incorrectly.
